One of the main reasons why Puebla is famous in Mexico, is because their exquisite and varied cuisine. Clay pots, “metates” and wooden spoons give our cuisine a taste that is different than the rest of Mexico.
The original indigenous cuisine was rich in “mole” and “pipianes” because of the availability of wild turkeys and many varieties of seeds and hot chili peppers needed to prepare them. They also had green and red tomatoes. Without doubt, an example of this is the famous “mole poblano” originated at the Santa Rosa Convent in the XVII century. The convents played an important role in the creation and revolution of the “Poblano cuisine”.
The traditional history of “mole” is an important lesson in culinary art. The story says that the Santa Rosa nuns were in their convent and one of them prepared a hot chili pepper sauce using “pasilla”, “mulato” and “ancho” chilies. In this ancient mixture they also used pork lard and olive oil.
